Hillbilly, I butcher and wrap our own for the last 30 years. my father-in-law was a butcher.

I'm a little late responding to this but I'm new here.
I butcher my own but if you live in Ajax then there is a guy in Bowmanville that I get to do sausage for me (when I don't do my own). I'm pretty sure he will butcher deer for you. I think it's called Kyles Meats on Hwy 57 right off the 401.
I find he is a little more expensive than others but any extra you pay him you will more than save in gas that you put through your vehicle going anywhere else and he sells really high quality meats.
Maybe this will help you next year.
