Perching

So the wifey, our fish hound and I got out on Sunday for 2 hours to do some perching and we were not dissapointed. Goal was to fill a pail for a 17 person gathering and treat everyone with some fresh perch. Pail topped out with 66 between the two of us in an hour and a half and probably well over 100 released. Then the real work came of scaling and filleting to get 132 boneless and scaleless fillets. Took a while but got it done and the fish were a hit at the gathering. Need to hit the tribs and walk off the extra 5lbs I gained now.

is that third pic pressure washing the scales off? if so, how effective is it? I've never seen this done before.

Thanks guys. Than the pressure washer works fantastic to remove scales. At first I used to put two nails in the fish, one in the head and one in the tail but one on the tail does the trick as well. I use roofing nails. Saves getting the hands pricked and works amazing.

So dumb question - you cook with the skin on?

I always skin out every fillet so no need to worry about scales...not trying to be smarta$$...just wondering why the extra step of pressure washing.

I love the way the skin tastes and the extra crisp it gives off. It's an extra step which is a pain in the arse but I find it much more enjoyable when I eat it.

I have never seen anyone descale a fish that way or even heard of it , i must be getting old ....lol I guess that method works for white fish to ? Oh really nice catch of perch , the wife and i are going later this afternoon ...
