The lakers we caught on Thursday, went into the Bradley this morning and became Indian Candy.
Followed my recipe that is on the Forum.
At Christmas, my wife gave me a set of "Magic Mats" to use in the Bradley. They are made of silicone and are supposed to prevent your fish from sticking to the trays. They worked like a charm and they can go in the dishwasher after use.
Just had to give the trays a simple wash, rather than scrubbing to get them clean.
Following pic is the fish sitting on the trays and drying before going to the smoker.
Used a mixture of Apple and Alder for smoke.
Second pic is a plate of the finished product. The shiny glaze is Maple syrup.
Yes, I have sampled it and it meets or exceeds expectations.
