> Herring Recipes, Any good recipes?

We still have Lake Herring from last year but we are not quite sure how we should prepare them. Does anybody have a good Lake Herring recipe? We have a smoker so smoked herring is something we could do. Thanks in advance guys

Old English Recipe:

Clean and scale your herring and remove the heads and tails.

Put a layer of herring in a oven proof baking dish.

Cover with sliced onions.

Repeat layers.

Cover with a mixture of 50/50 water and white vinegar.

Salt & pepper to taste.

Cover with foil.

Bake in a 350 degree oven for 2 hours.

Remove and allow to cool. Eat bones and skin and all.

You don't hear too often herring getting filleted but you can "youtube" the process and I'm tellin you deep fried with a perch or walleye batter is incredible...............On that noe, everything tastes good deep fried but seriously, this is good.
