yes ill be making bacon,dry cured,i dont know the exact recipe yet,im still researching...
a 12 lb belly is $70,ill lose a couple pounds so it wont be cheap,but i know what will be going into it and homemade bacon is 100% better than store bought and i love doing this kind of stuff

I got a pork should for $1.40/lb last week and then saw Supercentre had them on for $1.28. Time to stock up if you have a freezer, if the price is right that is.

Don't know if you saw or not that the wifey and I got each other a pellet smoker for Christmas. Looking forward to trying some of your recipes when we get the hang of it.

I used Bradley maple cure as dry cure when I did mine.
The belly was 2 inches thick at the thickest, so that called for 2 weeks of curing in Ziplock bags in the fridge. They had to be turned over every 2 days and the liquid that came out, massaged back into the belly.
While the end product was very good, I just found it too much work.
