What are you going to do? Make side bacon?

I did some last year and found it a lot of work with the curing and everything.

The end product was very good, but I figure I can buy side bacon when it is on special for a lot less than what it cost me to make my own.

If you are making side bacon, I would be interested to know your process.

I got a pork should for $1.40/lb last week and then saw Supercentre had them on for $1.28. Time to stock up if you have a freezer, if the price is right that is.

Yes John, that is where SIDE bacon comes from.

BACK bacon comes from cured pork loins or tenderloins.

Thanks Ralph.

Don't know if you saw or not that the wifey and I got each other a pellet smoker for Christmas. Looking forward to trying some of your recipes when we get the hang of it.

Hi John

If you have any questions or need help with anything, don't hesitate to ask.

Same for other members, if you need "smoking" help, let me know.

Ralph

I used Bradley maple cure as dry cure when I did mine.

The belly was 2 inches thick at the thickest, so that called for 2 weeks of curing in Ziplock bags in the fridge. They had to be turned over every 2 days and the liquid that came out, massaged back into the belly.

While the end product was very good, I just found it too much work.
