Honestly, I can't tell the difference bwt crappie and bluegill, after deep frying the fillets in beer batter..
I don't keep very many bluegill as they are generally too small, but the ones I kept - hand sized, the meat was identical to crappie IMO.
Comparing perch and crappie, the crappie meat is less firmer and sweeter. My family likes crappie and perch, the way I make it and it goes fast after prepared.
What I don't like, is cleaning crappie. Takes me longer, they have larger rib cage bones and awkward to hold and fillet. Perch and walleye, much easier to clean, and slightly more "enjoyable" to prepare...

If you don't mind me asking, what kind of depths are you targeting?
I am fishing in 7-9 fow with about 1 foot of weed growth on bottom. But can't fish the bottom 1 foot. It's a jungle. I jig the bait at 5 - 6 fow, so they come up from the bottom to hit the bait. Nearby there is a 13-15 fow drop-off. They move around a lot, in a somewhat tight school -- so some days I am on them, others nada..

thanks metalbuck, I started fishing for BG and SF last summer as I found a few spots with them all being at least 9" and bigger while i was chasing perch. Even got my first BG through the ice last week. I have bought some ultra light gear to fish for BG this summer. can't wait to get out and practice with it.
