Ralph, that looks amazing you have inspired me to try it again. I bought one today from Zehyrs at 2.99/lb the smallest one was 48$ and I want to replicate your process, but I have a couple questions, give me a call if thats easier.
What's "Ralphs Rub" and did you coat the meat first with oil or just wash and pat dry?
What temp did your bradley smoke at for the first 8 hours?
When taking it's temperature was that in the thickest part of meat muscle? if not do you know the temp difference from the thickest to thinest?
And finally, would it matter if the brisket was cut in half? I believe it's not going to fit in my smoker unless I cut it or fold it. Thanks Ralph, my first one I tried years ago was so tough it even challenged the dog.

Did the 2nd brisket today, following the same steps as the first.

Another success--turned out great.

No pics this time as they would have looked the same as before.
