I caught mine using a green chironomid fly on 2lb leader under a float. Thicker leader = no interest. Ridiculously tough fish to catch legitimately. Bring a rabbit's foot and a ton of patience.

10 years ago at point albino in very shallow water I watched quillback sucker sucking eggs as a bass was depositing eggs.it was amazing & disturbing to see.

How big do they get in our waters?
From what I found online, the Ontario record is 6 lbs and about 2 feet long. Generally they are larger than suckers and smaller than carp, which is appropriate since they are commonly called carpsuckers.
