Thanks for that Ralph.

I have not smoked fish for years, but after trying yours, I just got one again this spring and will be back at it.

That looks unbelievably delicious, but it has reminded me of something, we've got trout in the freezer, heck yeah baby!

Here's a recipe for Rainbow/ Salmon/ Pike Smoked Candy that I just used last week in my Big Chief:

Prepare your brine:

1/2 cup sea or kosher salt
1/2 cup white sugar
1 cup brown sugar
1 cup maple syrup (the real stuff)
garlic salt to taste
Montreal steak seasoning to taste

Mix together in a big bowl
let stand in fridge

Prepare fish:
fillet, debone and cut into 1/2" strips
place in brine for 24-48 hrs
then use toothpicks through end of meat and place on racks in smoker to dry for 6-12 hrs - once meat has a shine or "pellicle" its time to smoke for 4-12 hrs depending on how chewy you want.
Once done, just try not to eat it all at once!

I can't stop drooling either. I have to change me shirt now, I slobbered all down the front of it.

Great post!

It's too bad I couldn't reach through my computer monitor and grab a piece.
Looks delicious.
