Just thought I'd post a great way of cooking Rainbow Trout. Simply take a fillet and add a layer of real maple syrup followed by some brown sugar and salt, not sure what kind exactly not the fine stuff more of a chunky salt most likely kosher, and put that on a plank and barbecue it. Really simple and delicious, hope we pick up some Rainbows on the Niagara this year so we can try it again.

Thanks! Sounds delicious.. What kind of plank do I use on the BBQ? I have been cooking rainbows wrapped in tin fowl, with onions, lemon, salt, pepper and olive oil. But I will try yours..

Shoot forgot what type of plank, will have to ask my dad when I visit him later tonight, if I can get some more in depth instructions I will post them.

Seams correct, a cedar plank soaked for a little while before cooking.

At least 2 hrs soaking not just "a little while" like I said Tuna is correct.

That works. Some do it for 3-4 hours. The longer soak time may have the plank last longer, but if you have access to more wood, less is OK. No rules!!
