turkey fryer and some fish crisp and you are good to go no real trick other than timing which is just take practise the only other thing is that I find they have to be fresh as in same day or next day at the most Also watch a few YouTube videos on how to clean them as it is a bit of an art to get that Y bone out correctly Best eating size I find is 4-6 pounds, any smaller and they are tough to clean
