Looking at taking my grandson for his first ice fishing trip - figure Simcoe is the closest - don't need anything big - good hut - perch - something to keep an 8 year old happy

Suggest you read last year's post Jan thru March.
Some very good posts about what to expect - and various operators.
Casey's gets excellent reports. And so do some others. One operator - I think had two similar posts - abiut father and young kid arriving on time - agreed to time then having to stand outside in cold dark line up before transport was available to take them out to hit. Not good for adults let alone young kids . . .
One thing I'm learning is the short attention span kids have. Bring lots of distractions and various snacks. Last year I think that Elrik posted about taking out skates? And the kids running around the huts . . .

Many good operators out there. That is their bread and butter so most if not all will do the best they can to keep you happy. Best is to wait to see what area is hot on perch and jump on that. Reason why I say this is that you can go to a great operator but if you get skunked your grandson will not be excited to go again.
