what fillet knife should I get?

I use an old Normark...looks just like the black handled one in that sharpening video someone posted. Nice and flexible.

I've got what I think is a Victorinox carving knife...it's like a 14 " long blade x 1" wide, straight, round nose, and super flexible...works awesome when the regular length fillet knife doesn't reach across the fish. Takes the fillet off, and skins it, but too long and bendy for anything else.


More important than the knife, as others have said, is the ability to keep it sharp and use it well. Nothing more dangerous than a dull knife.

I’ve had cutco rapala Berkley cuda. Bought me a bubba blade and the thing cuts like butta best blade I’ve had. I have the tapered 9” amazing for salmon white fish trout one continuous cut threw bones everything

I use a blend of three German steel solingen knives....they are not cheap....be prepared to pay....but these things stay sharp forever....can shave with them....Have had them for over 25 years....and they clean a lot of fish.

BTW German tool steel is the best and hardest in the world, followed by Sweden steel and then American steel......China where most knives are made has the softest steel....pure garbage that you can not hold a edge on.

The Field Sharpener is the best $40 I ever spent for knife maintenance, I don't use anything else anymore at home or in the field. It's very simple to use and comes with simple instructions on how to use the guides for the correct angles and it has 5 different sharpening surfaces on it including a strop. If you ever wanted to actually learn how to sharpen a knife for real, this little device will teach you quickly. There are youtube videos on it for even more intsruction.

Cuda Titanium knife is the best I have used, the girlfriend won it in a course she took at the OFAH and it is great!
