Took advantage of the good weather but gave my kayak a break and tried some shore fishing for carp instead.
I know carp fishing is not very popular in this part of the world which is a shame. It's one of the biggest fish that can be caught and puts up an excellent fight, especially in the summer months when the water is warm.
Anywho, I will leave you with the photos of two brutes I pulled out over the weekend. One was 17 pounds and one 20 pounds.

I find carp fishing to be exploding, definetly in niagara. Every year its getting bigger and bigger. Good to get kids into fishing as they are very easy to catch. I usually carp fish quite a bit in the summer months but only went out a few times this year. Good catch!

good job Alex, very nice fish. I usually target carp in the spring before bass season opens. Might have to start targeting them at this time of year. it's a nice relaxing style of fishing.

What do you do with the carp? Keep them?
If keeping how do you cook?
Or bury in the ground as fertilizer?
Thanks
I bet all fish would make an awesome fertilizer
To answer your question, I kept them both - the smaller one for myself - easier to clean. And the larger one, I gave it to a friend.
Not sure if anyone tried it before, but they are great tasting fish - the Germans are eating carp as their Christmas dinner It has more bones than other fish but at this size the bones are large and easy to remove.
There are several ways to cook it - but mainly pan fried and then a side of polenta and sour cream garlic sauce.

Thanks Matt!
My favorite times of the year to catch them are during spring or summer as probably they fight twice as hard. Now they are a bit sluggish due to cold water temps. Still a good fight though.

My brother in law is slovakian and they also do carp for christmas dinner, though they batter and deep fry and do the same with cauliflower and serve with potato salad. Is heavy, but good. Funny story, they like christmas carp to be fresh. Killed that day fresh. The one time his dad had to buy the carp a few days beforehand, so to keep it fresh he filled the tub with water and kept the fish in it. Probably would have been better for his marriage for him to let his wife in on this fact instead of her discovering the fish there when she went to bathe!
