Fishing Vacation in the Carribean, Any destination recommendations?

I know this is not Lake Simcoe related but figured it would get more replies here.

We are looking to book a vacation for 7 days in mid February and would like to go somewhere where there is good fishing. We could book a charter for one day but that can get expensive so would like to be able to fish from shore as well. An all-inclusive would be great as well.

los cabos has exc charters we stay at the rius there very nice holiday and lots of fishing
