Pike and some scallops a friend brought me back from the coast. The scallops melt in your mouth. Will never do them any other way again.

How long do you smoke the scallops?

Hey Don

I used a mix of apple, hickory and mesquite.

I was experimenting here. I put three hours 0f smoke on the pork with basically no heat on it. Wanted to infuse a smoke flavor.

I then took the 2 pieces out, vacuum sealed and froze them.

Earlier this year, I found a recipe for pulled pork in the slow cooker and it turned out very well, but lacked some smoke flavor. My plan is to do these pieces in the slow cooker in the next few months, and hopefully there will be some smoke flavor this time around.

Hey Ralph, I smoked quite a few porks this summer for pulled pork. From the smoker I would put them in a crock pot overnight on low heat with a bit of apple juice added, in the morning the meat would just fall apart and then I would add Sweet Baby Ray's Hickory and Brown Sugar BBQ sauce and set on keep warm for a couple of hours........got lot's of good reviews up at the lake.

Also did one in a jerk marinade, smoked it until an internal temp of about 260 degrees then put it in the crock pot for a couple of hours until it was ready to fall apart. Added a jerk gravy I get from a restaurant by where I work to it just before serving......it was awesome.

I see Bradley has come out with some new flavours for their pucks......saw a box of beer flavor at Canadian tire the other night.......how can you go wrong with beer flavour

Never thought of smoking perch and pike. Doesn't seem like enough fat in the meat but thats just my opinion. How did it turn out? Racks look phenomenal though!

Some Bradley Smokers offer a cold smoke option, great for smoking things like fish and cheese.

Hey Ralph
Don't know if you've ever tried it but the only place I will use liquid smoke is in a slow cooker doing pulled pork. It really works well. Keep me posted as to how it turns out done the way your planning this go around. Cheers. Don

VBB. The Perch and pike turned out awesome. Gotta really keep your eye on the perch just due to the fillet sizes but they smoke well and the Pike well all I can say is it's like candy.
