So here is what it looks like before it goes into the smoker.
I made the apple pie filling:
-1 cup water
- half teaspoon cinnamon
- 1 eight cup corn starch
- quarter cup white sugar
- quarter cup yellow sugar
- 4 granny smith apples cubed
add all ingredients but apples bring to boil. Once boiling add apple cubes. cook 12 min. stirring often. Cool filling completely. cut loin in middle not all through, place cold pie mix in loin. leaving some in pot for glaze. i put paprike, pepper and garlic as a rub
remaining mix in pot bring to boil and cook down to apples a
using apple wood in bradley i put 12 pucks. Smoker between 215 and 220F When temp reachs 235. now bast with what is in pot. Continue smoking till 245F remove from smoker tent with foil for 10min.
