I notice you're keeping them all

how do you cook them? I haven't yet found a recipe and cooking method for making them palatable

Smoke them or pan fry with cajun batter

Huh?? to each his own, I guess. I find most specks quite delicious. Those caught in a muddy lake might be a bit less so. Pan fried with a light dusting of flour.
