As I understand it, if I sign up for a subscription for about $30 I lose everything after 1 yr. I seem to recall that, at one time, you would just lose any updates after 1 yr. Is that still the case, or do I lose everything? TIA

The original Navionics pay once and keep it has zero updates and works the same as before.

The new yearly subscription one has different features and updates.

Once you update to the yearly subscription from what I understand you can not go back.

You will still be able to see all the contours and you will still have all your waypoints. You will however not have map options like chart layers and overlays for depth shading and satellite view. Its not worth 30$ upgrading for those minor features.

What if I'm trying to get the app for the first time? Is there a one time payment deal or do I have to pay monthly? The 15 day trial I'm using and am quite happy with it

Yes just a one time payment for your phone. But when I got a new phone I couldn’t transfer my old waypoints to my new phone and had to buy it again.
