These are the only lakers I would eat/consume and the smaller the better......taking in slot size applications

Never ate a Simcoe laker yet so cannot advise, but my guess would be quite less fatty given the sizes we are talking about

Ate a 8-9 lb Simcoe laker once (a long time ago) and wouldn't do it again...edible but just not good enough to make it worth killing. For sure the smaller lakers from those and Algonquin lakes are pretty good table fare and agree that the smaller the better. It's likely a reflection of the smaller ones' prey...alot more plankton than greasy baitfish.
