Hey everyone just curious as to what technique you have found best for preparing and cooking herring. I don't normally keep them but want to try something new

Gut it. Cut the head off. Cut the tail off. Then cut into .5” steaks. Put them in a mason jar and pickle them. They are great in 5 days or so. The bones dissolve when pickled.

X3 on the pickled herring...add a splash of white wine and some Vidalia sweet onions is key....I also do this for pickled Pike .....takes a good week or so depending how much vinegar and sugar in the brine to dissolve the bones....lots of on line recipe's to look at.

Ha---Amsterdam is the only place I saw pickled herring on a bun being sold from a sidewalk cart instead of selling burgers etc. Prob not a great way to make money in downtown TO though!

My pleasure. I did it a few years ago. I would like to find a lake with a good population to make more. The time I did it it was a friend and I that went in on both our catches to try it. We had three and it made one big mason jar.

I have also fished it here and there. Tons of smelt. Never saw or heard of a herring there but doesn’t mean there aren’t as I haven’t targeted them there.

I got one there a few years back but don't think they're around in any great #'s anymore.

…As for herring prep, I prefer a simple approach, one treble hook near the dorsal and a second just behind the head, salt to taste.
I agree, although hook placement has some room for discussion
