With the ice storm and the power out for a week, we lost all the stuff in our freezer, including the back bacon I did last Fall.
The other week, Freshco had Peameal Bacon Chubs on sale, so I bought 4 around 2lbs each. They are already cured, so all I did was wash off the cornmeal and then smoked them.
Sliced them to today and made 6 double sided vac. sealed packages with 12 slices in each package. They haave gone into the freezer. Oh yeah, I was going to slice them a couple of days ago, but vac. sealer bit the bullet and I had to replace it. Good deal at CTC, $169 Cuisinart vac sealer on sale for $69.
