I just fillet the perch and leave skin and fillet attached to perch right by the tail then just fillet the skin off,leaving skin attached makes it much easier to not slide around.

yeah i do it the same leave the skin attached by an inch and just run the knife through the filet.. after takin out the bones and such... easy filletin and easy clean up no mess.

2 minutes for 1 perch.............using an electric knife you can do same inless than 1/2 the time.
Not the first time.takes getting used to but simple after that.
good enough vid though..........look for the ones from the Erie charter guys, they do it way quicker and also show you how to ''"zipper" a walleye.best way to get rid of 'fine" bones plus lateral line meat/flavour

yes I can do a perch in one minute,lot less cuts then the video shows.was also showed the zippering walleyes makes it easier and lots tastier.
