Had a good day at the Exeter game farm, Angelo does it right imho. Now what to do with pen raised pheasants and chukars. They obviously are not the same as wild birds, a circumstance of the climate in Ontario. they don't have access to the wild feed a bird like this would have where a wild population exists. There are tons of online recipe's but i'm guessing people on the forum might have some of their own. Any recipe ideas are welcome.

Pretty much count on game farm birds to be young of the year so can enjoy the flavor ( although not as pronounced as a wild bird) with any roast chicken recipe.
For something different I tried this recipe which was a success on the rest of the family that aren't into wild game as much.

Got some birds with a buddy just north of Exeter game farm at Hullet last Thursday.

What dog do you have?
usually make a run after the control hunt myself...well as long as the snow holds off.

I went there last year and we had a blast (pardon the pun). Angelo is the man for sure.

I would still recommend brining these birds or wrapping them in bacon. Besides that any chicken recipe will do.

I tried a few different recipes for mine and the ones where I used brine made a huge difference.

Good luck!

FFF, I have a three year old Pudel Pointer who is still a work in progress, I don't take things to seriuosly anymore so he isn't as well trained as he was bred for but we are still working on it
